Q. Which hard foods can be cut with the LeverEdge™ knife?
A. Most any hard vegetable can be cut with ease. Examples include squash,
rutabagas, turnips, corn-on-the-cob, beets, cabbage, and sweet potatoes.
Q. What other foods can be cut with the LeverEdge™ knife?
A. Any fruit and vegetable suitable for chopping can be cut with the LeverEdge™
and ripple cut knives (e.g., carrots, onions, apples, pears, most melons
(such as watermelon, cantaloupe, honeydew, crenshaw), strawberries, bananas,
mushrooms, celery, ginger, garlic, cabbage, potatoes, peppers, cucumbers,
pickles, zucchini, radishes, and olives). Other foods include hard cheeses,
refrigerated cookie dough, hard boiled eggs, and any kind of moist quick
bread, (e.g., banana bread, date bread, and, pound or fruit cake).
Q. What foods can not be cut with the LeverEdge™ and ripple
cut knives?
A. There are a few foods that are not recommended. They include coconuts,
frozen foods, bones, and foods that are suitable for slicing, not chopping
-- typically those with liquid or squishy centers, like tomatoes, citrus
fruits or yeast breads. Note that foods which are typically sliced rather
than chopped can be cut on the LeverEdge™ cutting board using a
regular kitchen knife and the handy slicing guide found on the LeverEdge’s
pivot post which enables straight, even slicing.
Q. What material are the cutting boards made of?
A. The removable white cutting board is made of polypropylene. The cutting
board base is made of a plastic know as ABS. Both are materials that are
ideal for cutting boards.
Q. If the LeverEdge™ knife gets dull, how do I sharpen it?
A. The knife has a special edge that does not need sharpening.
Q. Is the LeverEdge™ cutting center available in stores?
A. No.
Q. Is the cutting tips video available on VHS tape?
A. No.
Q. How do I clean the cutting center? Is it dishwasher safe?
A. The cutting board base, removable cutting board, blade lock and blade
guide/finger shield can be washed by hand or on the top rack of a dishwasher.
Like other makers of fine, high quality knives, we recommend washing the
LeverEdge™ and ripple cut knives by hand.
Q. Is it safe to use around children? Is it safe for my children
to use?
A. Safety experts recommend that sharp objects, such as knives remain
out of the reach of children. Additionally, when children are in the kitchen
they need adult supervision.
Q. How large are the cutting boards?
A. The cutting boards both measure 10- x 10 1/2-inches.
Q. What is the length of the knife blades?
A. The LeverEdge™ knife is 15-inches long with a 10-inch blade.
The ripple cut knife is 14 7/8-inches long with a 5 3/4-inch blade.
Q. Does the knife have to be at a certain height?
A. Height will vary with the food being cut. Both the written instructions
and the Cutting Tips DVD that accompany the unit provide clear guidance
on where to position the knife on the pivot post before cutting.
Q. How many days will it take for shipping?
A. Normal shipping time is 12 to 15 days. If you request rush shipping
(for an extra $10.00) it is 3 to 5 business days via UPS Ground
(expedited next day shipping at warehouse).
Q. What keeps it from sliding off the counter?
A. The cutting board base has friction pads that hold it in place on the
counter when cutting.
Q. What is the blade guide/finger shield for?
A. Most professional chefs when fast chopping, use the knuckles of their
pointer and middle finger as a guide for determining the next slice. The
blade guide enables you to use it rather than your knuckles and at the
same time shields your knuckles from the blade.
Q. Are there two different cutting surfaces? If so, why?
A. Yes. The cutting center has two cutting surfaces, the removable white
cutting board and the surface of the cutting board base. It’s often
convenient to have two cutting surfaces. You can cut wet food on one and
dry food on the other. For example, you can use one for meat and one for
vegetables without having to stop and wash the other board. They also
nest for compact storage.
Q. Is there a warranty?
A. In addition to the 30-day risk free trail period, the product is cover
by a one year limited warranty.
Q. Do I have to wear goggles when using this?
A. No.
Q. How hard do you have to push on the knife to cut?
A. Very little force is needed if food is properly positioned. Clear instructions
are provided both in the written material and on the Cutting Tips DVD
that accompany the unit. Minimal force is required with most foods, a
bit more with the super hard foods like squash.
Q. Is it hard to change knives?
A. No. Insertion of the knives into the post is very easy. Clear instructions
are provided both in the written materials and on the Cutting Tips DVD
that accompany the unit.
Q. How
many knives come with it?
A. Two. The LeverEdge knife which is used for cutting hard foods as well
as fast chopping and slicing and the bonus ripple cut knife. The bonus
ripple knife also works well for fast chopping.
Q. What is the second knife for?
A. Making ripple cuts.
Q. What kind of material are the knife blades made of?
A. High quality hardened stainless steel.
Q. How does precision cutting work?
A. Precision cutting is the fast, even chopping of fruits and vegetables.
The secret to that kind of cutting is keeping the tip of the knife on
the board at all times, something a professional chef does automatically,
but which the average person finds difficult to do. With the LeverEdge™
